Tupelo honey is truly one of the most popular, most beneficial, and best tasting honeys in the world. It is unique to the southeastern United States.
The highest quality tupelo honey is produced from the Apalachicola river to the Choctahatchee river south of I-10, which is where our tupelo is produced. This area has the highest concentration of tupelo trees. The specific tree that produces the nectar that honeybees use to make tupelo honey is called by several names: white tupelo, ogeechee lime, ogeechee tupelo, and the scientific name is nyssa ogeche.
The tupelo flower only blooms for a short period each spring. Sometimes it is only a few short days, but in a good year the flow will last around two weeks.
The nectar from this tree produces a very light honey with a green tint if held in the right light and has a unique scent slightly reminiscent of pear. Tupelo has a light, sweet taste with a very unique and pleasant aftertaste. This type of honey is extremely slow to crystallize.
Tupelo honey has an especially high fructose to glucose ratio. This allows tupelo honey to be absorbed more quickly by the body initially, but it also is available to be used as energy over a longer period of time than other honeys. This makes it great for an energy boost during physical activities.
